Today's lunch, like most Monday's, was the left-overs from lunch with my in-laws yesterday. My MIL thought it was going to be hot so, very understandably, didn't fancy cooking a hot meal so we had salad instead. Before we sat down yesterday, I was pondering on what else I could eat here to fill me up that wouldn't leave me short for the rest of the week... what I seriously underestimated was the filling-up-ness of the protein! I was stuffed yesterday and I'm nicely full today.
The salad yesterday and the leftovers today consisted of vegan Memphis BBQ mini fillets, 2 mini cucumbers, 5 lettuce leaves, 6 (possibly plum) tomatoes and vegan grated cheese with a 500ml glass of water to wash it all down with. I had a hard boiled egg and stick of celery yesterday too, but not today.
