The bread has been open and kept in the fridge for several days now and it hasn't gone mouldy yet, so I reckon I'll keep open, defrosted loaves in the fridge while I'm chomping my way through the full loaves then experiment again when I start with the half loaves.
Today's breakfast was 2 slices of wholemeal bread and dairy-free spread with an orange juice again.
I've got some allergenic ready meals to use up, so I'll make a start on those from today until Monday, just chips on Tuesday then finish them off on Wednesday to Saturday... basically I'm gonna be spending the vast majority of the next 7 days feeling very very ill, but needs must I guess and I'll know that they are off the menu for me from now on.
