For today's lunch, I couldn't really have been healthier! It was a salad of a handful of baby spinach, 2 pickled eggs, 4 cherry tomatoes, 2 sticks of celery, 80g of cucumber, plant-based cheese and approximately 20g of a Vegan Mayo, all washed down with a 330ml can of a Sparkling Mango pop.
