Considering that today's lunch was pretty much entirely vegetables (other than the breading on the mushrooms) and I didn't snack at all this morning, so was getting hungry when I went to make it, it's nicely filled me up! I think I've got both of today's meals spot on so far and I'll hopefully remember to have a mug of instant soup for tea in a few hours... if I manage it without nibbling this afternoon, then I'll have gone through the entire day without snacking, which is a huge achievement for me!
Today's lunch was 5 breaded garlic button mushrooms, 142g of frozen mixed veg, 80g of frozen butternut squash chunks and 80g of sweet potato chunks, cooked in 2ml of air-fryer oil and washed down with a 330ml can of a Sparkling Mango pop. I used too much oil again so I've gotta remember to be more sparing with it tomorrow.
