I've well and truly had my 5 portions of fruit and veg today - almost all in my lunch! lol
Today's lunch was 5 breaded garlic mushrooms, 142g of frozen mixed vegetables, 80g of sweet potato chunks and 80g of butternut squash chunks, air fried in 1ml of air-fryer oil and washed down with a 330ml can of a Sparkling Mango pop.
I think my body is getting used to getting proper meals into me now that are more substantial than just a 350ml mug of instant soup as sometimes my only meal that I had survived on for well over 2, almost 3, years!
I'm just clearing out my freezers, then it'll be salads for lunches after that and I'm gonna attempt to air-fry eggs for the first time in my life too this year. I've already got the case things and oil for them and I've got eggs on my grocery order in a couple of weeks, so keep your fingers crossed that I don't make a huge mess or even blow up the street the first few times I try to cook them lol
