Today's lunch really couldn't have been easier for my carer to make 'cos it just involved pushing the leftovers from yesterday's roast dinner with my in-laws onto a plate and bringing it in! It consisted of 2½ portions of a vegan family roast, a portion of runner beans, and a portion of roast potatoes cooked in vegetable oil. I've still gotta consume over 500 calories before midnight so there will be multiple drinking chocolates and mochas when I get back from my health appointment this afternoon lol
